Head Chef

Visa sponsorship

Hospitality · Sydney, NSW, Australia · Full-Time · Discussed at interview · Visa: Employer sponsored

For a chef ready to step from senior sous or head roles into a flagship opening, this expression of interest is a significant career move. A hospitality group with several award-winning restaurants is appointing the Head Chef of its new luxury Modern Japanese fine-dining restaurant in the Sydney CBD, opening in mid 2027 within a prestigious new development.

The position carries real scope. You would collaborate with the Executive Chef, a fourth-generation Japanese chef from Osaka, on menu development and innovation, own the commercial side of the kitchen and build a brigade capable of sushi, robata, omakase, à la carte and private dining service. Leadership style matters here: the group values humility and confidence together, dignity for every team member and no tolerance of bullying. Sponsorship is considered for exceptional international candidates.

Indian chefs who have led Japanese premium kitchens should present that progression clearly on an English CV, with team sizes, sections and cost outcomes. Use Build AI CV to draft a Japanese fine dining CV for Sydney.

  • Build and inspire a brigade that performs at a high level, coaching each chef along the way
  • Collaborate with the Executive Chef so that new menus and ideas reach the plate exactly as planned
  • Direct the sushi, robata, omakase, à la carte and private dining sections
  • Set the bar for flavour, consistency and plating so guests remember the meal
  • Own the kitchen P&L levers: food cost, labour, purchasing, budgets, rostering, stock and profitability, while hiring and training talented chefs with firm accountability and discipline
  • Keep food safety, hygiene and compliance at the top standard and grow a culture where professionalism, teamwork and mutual respect come first

Requirements & Eligibility

  • A proven track record in senior leadership, earned in acclaimed Japanese premium-dining restaurants or in hospitality groups that are internationally recognised
  • A history with renowned restaurants of similar calibre counts as highly regarded
  • Japanese culinary knowledge that is exceptional, backed by technical ability and an eye for detail
  • Strong commercial insight into how a kitchen performs financially, covering both food and labour costs
  • A demonstrated talent for developing, motivating and retaining outstanding teams in the kitchen, together with excellent skills in communication, organisation and leadership
  • Composure under pressure: calm and professional at all times
