Sous Chef

For chefs focused on long-term career progression, this role offers a clear step into kitchen leadership. A long-established Italian dining venue in Victoria is seeking an experienced Sous Chef, and a talented Chef de Partie ready to move into a leadership position is also welcome to apply.

Working closely with the Head Chef, you will sharpen your leadership capability and help shape daily operations, team development, specials and menu direction. Fresh pasta sits at the core of the menu, which makes strong pasta expertise highly valued.

The kitchen is stable and established, with accommodation provided, relocation assistance for the right candidate and visa sponsorship for eligible applicants.

Key Responsibilities

Contribute creative thinking to specials and the wider menu direction
Partner with the Head Chef in leading and coordinating daily kitchen operations, taking full leadership of the team in the Head Chef's absence
Oversee fresh pasta preparation and service while upholding consistent standards of food preparation and presentation
Plan and manage daily kitchen prep, delegating duties effectively across the brigade
Monitor workflow and service throughout peak trading periods
Contribute to the recruitment, training and development of junior staff
Operate across a range of kitchen sections as the need arises
Manage stock and ingredient usage efficiently
Uphold a clean, safe and well-organised kitchen

Requirements & Eligibility

Strong, demonstrable fresh pasta preparation skills
2–3 years in a Sous Chef role, or proven readiness to step up from a senior Chef de Partie position
Prior experience supervising or supporting junior chefs
Strong leadership and communication capabilities
Capacity to manage a fast-paced kitchen environment, backed by good organisational and delegation skills
A high standard of reliability and professionalism
A strong focus on consistent, high-quality food
