Sous chef and Head chef

This is a leadership-focused culinary role in Wollongong for a professional who wants to grow beyond cooking into team development, kitchen performance and operational excellence. It is open to established Head Chefs and to experienced Sous Chefs ready to progress into greater responsibility.

The hospitality operation values pride in leadership, consistency and exceptional kitchen standards, and expects strong culinary discipline, initiative and a hands-on approach to leading. Experience in Italian cuisine, pizza and pasta will be highly valued, so chefs from India and elsewhere with that background may find this a strong career fit.

Key Responsibilities

  • Create and refine menus, recipes, specials and seasonal dishes
  • Direct kitchen operations to deliver smooth, reliable service
  • Define and uphold food quality, presentation and consistency standards
  • Mentor, motivate and develop chefs, cooks and junior kitchen staff
  • Coordinate food preparation and service across every section
  • Lead from the front during busy and high-volume services
  • Manage portion sizes, food costs, wastage and overall kitchen profitability
  • Take responsibility for purchasing, stock rotation, inventory control and supplier coordination
  • Contribute to kitchen scheduling, rosters and labour planning
  • Embed effective food safety, hygiene and workplace practices
  • Train team members on preparation methods, recipes and kitchen standards
  • Identify efficiency and workflow improvements, maintaining a clean, structured and well-organised kitchen
  • Partner with management and front-of-house teams on kitchen planning and operational decisions
  • Step in to lead kitchen service when required and foster a positive, respectful, performance-focused team

Requirements & Eligibility

  • Demonstrated ability to lead and develop a kitchen team, built on proven experience in a Head Chef, Sous Chef or senior culinary position
  • Strong commitment to quality and consistency, with confidence in a fast-paced professional kitchen
  • Good understanding of food costs, stock control and wastage management
  • Strong food safety and hygiene knowledge
  • Effective communication and team leadership skills, supported by an organised, dependable and professional approach
  • Flexibility to work weekends and rotating rosters
  • Italian cuisine experience (strongly regarded) and pizza and pasta preparation experience (highly regarded)
  • Relevant culinary qualifications or equivalent industry experience would be advantageous
  • Visa sponsorship is available for the right candidate; candidates requiring sponsorship may be considered subject to eligibility
