This Head Chef appointment in Clare is aimed at an established Head Chef or experienced Sous Chef who can show the practical skill, leadership record and commercial understanding needed to own a busy hospitality kitchen.

Key Responsibilities
- Plan and execute menus to a consistently high standard, supporting seasonal menu development and food promotions
- Assume overall accountability for daily kitchen operations, including the preparation of staff rosters aligned with operational needs
- Lead, supervise and develop the kitchen brigade
- Maintain quality, presentation and consistency throughout all food services
- Coordinate restaurant and breakfast service alongside catering for conferences, weddings and private functions
- Control purchasing, stock and inventory while monitoring food costs and minimising wastage
- Uphold food safety, HACCP and workplace health and safety standards
- Collaborate with other hospitality departments to deliver successful service
- Review kitchen processes and implement operational improvements
- Maintain a clean, organised and professional kitchen
Requirements & Eligibility
- Demonstrated professional experience as a Head Chef or experienced Sous Chef, built in strong commercial kitchens
- Relevant experience in hotels, resorts, restaurants or comparable hospitality environments
- Demonstrated ability to lead and manage a kitchen team, with strong staff training and development capabilities
- Experience in menu development and implementation
- Practical knowledge of food costing and kitchen budgeting, plus experience in purchasing, stock control and inventory management
- Knowledge of HACCP and Australian food safety practices
- Capability to manage multiple services and functions in a busy environment
- Good organisational and time-management skills alongside strong communication and team leadership skills
- Proven capacity to work independently and take ownership of kitchen operations
- Professional experience that can be supported through appropriate employment documentation
- Ability to meet applicable Australian employment and sponsorship requirements
