Key Responsibilities

Shape modern, seasonal menus and oversee their implementation
Drive overall kitchen performance and manage day-to-day operations
Coordinate preparation and service across a high-volume operation, applying Japanese techniques and Asian-inspired flavours where they fit
Ensure consistency of taste, quality and presentation so every dish meets established standards
Lead, mentor and grow the kitchen brigade, fostering a positive and accountable culture
Oversee food costs, stock and budgets, including purchasing and supplier relationships
Uphold food safety, hygiene and compliance requirements
Identify and drive improvements to kitchen systems and efficiency

Requirements & Eligibility

Proven track record as a Head Chef or Senior Sous Chef, gained within a modern, high-end or premium kitchen
A background in Japanese, Asian or fusion cuisine is highly desirable
Strong evidence of kitchen leadership, team supervision and team development, supported by strong communication skills
Experience developing menus and seasonal food concepts
Strong working knowledge of food safety and hygiene practices
Experience overseeing stock, food costs and kitchen operations
Capacity to perform effectively in busy service periods with a high level of attention to detail and presentation
Appropriate employment and experience documentation must support all professional experience claimed
