Key Responsibilities

  • Shape menu development and suggest new food offerings
  • Direct the full range of daily kitchen activity
  • Oversee the brigade during food preparation
  • Back the team up throughout each service
  • Set a high bar for presentation, consistency and food quality
  • Keep workflow efficient in a high-traffic casual dining venue
  • Cook and supervise dishes that draw on varied cooking techniques
  • Track portion sizes and production standards
  • Coach and train kitchen staff, offering ongoing guidance
  • Plan food preparation and manage stock levels
  • Look after storage and place orders as required
  • Keep the kitchen fully aligned with HACCP, hygiene and food safety requirements
  • Run a tidy, orderly and professional workspace
  • Foster a positive culture where the team is accountable and performs highly
  • Cover a flexible roster spanning evenings, weekends and public holidays

Requirements & Eligibility

  • Formal training through a Certificate III or Certificate IV in Commercial Cookery, or an equivalent recognised qualification
  • At least 3–5 years working in relevant commercial kitchens
  • Approximately 1–2 years leading as a Head Chef or senior Sous Chef
  • A track record of directing and coordinating a professional kitchen brigade
  • Command of contemporary cooking methods across varied culinary styles
  • Reliability in producing consistent results under busy service conditions
  • Well-developed leadership, organisational and communication capability
  • In-depth understanding of HACCP procedures and food safety legislation
  • A professional image and high personal conduct standards, plus flexible availability over a seven-day roster
  • A current CV, contactable professional referees and dependable supporting evidence of identity, qualifications and relevant employment history
  • Sponsorship may be available for an eligible candidate meeting the applicable requirements
