General Manager

Here is a chance to shape a premium venue from its foundations. A newly established Italian restaurant in New South Wales is seeking a senior hospitality leader as General Manager to build a fully structured, high-performing operation, rather than simply maintain an existing one.

You will hold significant responsibility across the entire business: establishing the FOH structure, recruiting the opening team, implementing systems, controlling costs and upholding exceptional service standards. Your candidacy will rest on demonstrable venue results, team leadership and previous operational responsibility, making this a strong next step for an experienced hospitality executive.

Key Responsibilities

  • Coach managers and team members to embed a consistent service culture
  • Drive pre-opening preparation and operational readiness, establishing practical FOH structures, floor plans and service workflows
  • Recruit, interview, onboard, train and develop a high-performing opening team of hospitality staff
  • Define service expectations and performance standards
  • Develop SOPs and daily operating procedures, along with opening and closing systems for the venue
  • Direct large FOH and bar teams throughout daily service
  • Plan rosters against staffing requirements while controlling labour expenditure, wage costs and productivity
  • Administer the restaurant POS and operational systems, including Deputy
  • Lead premium beverage operations across wine, spirits and cocktails, tracking beverage costs, GP, pricing and margins
  • Oversee purchasing and supplier relationships, negotiating terms that support commercial outcomes
  • Track service quality, guest experience and operational performance
  • Ensure RSA, WHS and restaurant compliance requirements are met
  • Identify operational gaps and implement effective solutions
  • Balance hands-on involvement in service with commercial oversight

Requirements & Eligibility

  • Ability to evidence prior hospitality leadership through a credible career history
  • Strong track record in senior restaurant or hospitality management, with experience across premium or high-volume restaurant operations
  • Demonstrated experience opening or establishing a new hospitality venue, with a verifiable history of venues managed, launched or operationally led
  • Experience leading substantial FOH and bar teams
  • Strong recruitment, leadership and staff training experience
  • Hands-on understanding of restaurant floor operations
  • Strong wine, spirits, cocktails and beverage service knowledge, including experience managing beverage GP, costing, pricing and margins
  • Practical rostering, labour budget and wage control experience, plus familiarity with POS and restaurant management platforms
  • Strong purchasing and supplier negotiation background
  • Sound knowledge of restaurant compliance, RSA and WHS
  • Capability to develop systems and procedures from the ground up
  • Strong commercial awareness and operational decision-making ability
