For a chef aiming to build a long-term career, this established hospitality position in Victoria offers genuine responsibility. The employer wants an experienced Indian Chef with strong practical expertise in Hyderabadi Dum Biryani, Tandoor cooking and South Indian tiffins.
A successful kitchen depends on more than recipes, so the position calls for managing quality, controlling costs, supporting colleagues and owning the food that goes out, while contributing to efficient operations and team development.
You will also maintain authentic culinary standards and have input into menu and operational decisions, the kind of experience that strengthens your leadership profile.
Key Responsibilities
- Lead the preparation of Indian cuisine and be accountable for its quality
- Apply authentic techniques and established recipes to Hyderabadi Dum Biryani
- Cook Tandoor dishes and prepare South Indian tiffins
- Contribute to menu development while ensuring recipes stay consistent
- Oversee mise en place and daily food preparation, including monitoring quality and checking delivered ingredients
- Manage kitchen equipment and maintain correct cooking temperatures
- Contribute to food costing, ordering and portion control
- Apply efficient food storage and stock rotation procedures
- Cater for customers with allergies and specific dietary requirements
- Supervise and mentor kitchen staff, providing training and guidance to junior team members
- Keep kitchen operations clean and organised
- Uphold food safety and hygiene standards consistently and support compliance with applicable food-handling and workplace regulations
Requirements & Eligibility
- Qualification in commercial cookery or a relevant culinary trade
- Minimum 1 year of relevant industry experience, plus a previous Chef, Sous Chef or equivalent role
- Strong Hyderabadi Dum Biryani production capability
- Hands-on Tandoor cooking experience
- Background in preparing South Indian tiffins and authentic Indian dishes
- Track record managing food costs and portion control
- Working knowledge of kitchen ordering and stock management
- Capable of scheduling, supervising or training kitchen staff
- Current Food Safety Supervisor certification (highly regarded)
- Strong leadership and communication skills within a team, and the ability to work independently and own your responsibilities
- A reliable, proactive and well-organised approach to kitchen operations, backed by strong problem-solving skills
