Key Responsibilities

  • Deliver authentic Japanese cuisine with consistency and strong presentation
  • Prepare sushi and sashimi using professional knife skills and preparation methods
  • Carry out seafood preparation and cold-section mise en place, completing all daily prep ahead of service
  • Cook Japanese hot dishes on the grill, fryer, pan and yakitori stations
  • Select, prepare and handle ingredients in line with professional kitchen standards
  • Control portions precisely and present dishes consistently
  • Apply sound food storage, freshness and stock rotation practices
  • Meet food safety, hygiene and sanitation requirements at all times while keeping preparation and cooking areas clean, organised and ready for service
  • Perform efficiently and accurately in high-volume service
  • Coordinate with the kitchen team for smooth service and support colleagues with daily operational requirements
  • Rotate across kitchen sections and meet changing operational needs
  • Demonstrate professional standards, discipline and attention to detail

Requirements & Eligibility

  • Minimum 3 years of professional Japanese cuisine experience, with a proven employment history in Japanese restaurants, sushi establishments, izakaya or similar commercial kitchens
  • Demonstrated practical capability in sushi, sashimi or Japanese hot food preparation
  • Well-developed knife skills and seafood handling experience
  • Capacity to demonstrate genuine hands-on culinary experience relevant to the role
  • Fast-paced professional kitchen experience, including maintaining quality and consistency through busy services
  • Sound knowledge of food safety, hygiene and professional kitchen practices
  • A reliable, punctual and professional work ethic
  • Effective communication and the ability to contribute as part of a kitchen team
  • Candidates with full Australian working rights are welcome to apply, and overseas candidates may be considered for 482 visa sponsorship where eligibility requirements are met
