Key Responsibilities
- Lead preparation, service and close-down operations with the kitchen team
- Direct the day-to-day organisation and performance of the kitchen
- Safeguard high standards of food quality, presentation and consistency
- Contribute to creating, refining and costing menus and dishes
- Convert menu concepts into efficient kitchen procedures
- Monitor food cost, stock usage, wastage and inventory
- Manage ordering and supplier relationships
- Forecast stock needs to keep kitchen operations uninterrupted
- Design practical rosters aligned with service requirements and team capability
- Guide, supervise and motivate kitchen staff, supporting their onboarding, training and ongoing development
- Foster a professional, accountable team culture
- Pinpoint opportunities to lift productivity and service efficiency
- Make timely operational calls during high-pressure services
- Ensure HACCP, food safety and workplace hygiene compliance
- Maintain food preparation areas and equipment to a high standard
- Collaborate with hospitality and operational leadership teams
- Resolve service issues while protecting food and guest standards, contributing creative ideas that enhance dining
- Support senior culinary leadership with broader kitchen and operational initiatives
Requirements & Eligibility
- Proven professional background as a Sous Chef or Head Chef
- Solid a la carte restaurant experience
- Experience across standalone or multi-site hospitality venues
- Previous hotel or resort experience will be advantageous
- Track record in kitchen leadership and team supervision
- Capacity to lead by example in high-volume service
- In-depth understanding of professional kitchen systems and workflows
- Proven commercial awareness of food costs, stock and wastage
- Excellent communication and people-management capability
- Confident decision-making and strong problem-solving ability
- A creative mindset and genuine passion for quality food
- Effective management of operational and administrative responsibilities
- Highly organised and attentive to detail
- Consistent commitment to food safety, hygiene and cleanliness
- A positive, professional approach to teamwork
- Ability to work rotating shifts, including evenings and weekends
- Current driver's licence and current Food Safety Supervisor certificate
- Relevant culinary qualifications and/or substantial industry experience
- Ability to substantiate relevant professional experience and qualifications during assessment
- Must meet the applicable criteria for employer-sponsored employment, with sponsorship available for the right candidate
