Progressing into a Sous Chef position is a significant career step, demanding consistency, leadership, organisation and the confidence to take responsibility when the kitchen is under pressure, not just technical cooking ability.
This Chef role, based at a professional hospitality operation in Eden on the New South Wales South Coast, is aimed at an experienced Sous Chef or senior culinary professional whose qualifications, experience and practical capabilities can be clearly demonstrated and verified.
You will help drive daily kitchen performance, support senior chefs and lead the team in delivering high-quality food and service. For chefs from India and elsewhere, it is an opportunity to build leadership experience in Australian hospitality.
Key Responsibilities
- Contribute to menu planning and kitchen preparation alongside senior chefs, including the development and introduction of new and seasonal items
- Direct and coordinate kitchen activities across daily service
- Assume leadership of kitchen operations as required when senior chefs are absent
- Produce dishes that meet established quality and presentation standards
- Oversee plating and ensure timely readiness of dishes for service
- Supervise kitchen staff through busy service periods and develop the team through training in kitchen procedures, food preparation and safe work practices
- Uphold rigorous food safety, hygiene and HACCP standards
- Manage stock levels and food preparation against operational requirements, contributing to inventory management, food costing and waste reduction
- Verify the quality, consistency and presentation of food ahead of service
- Support kitchen equipment maintenance and escalate maintenance requirements
- Ensure work areas are clean, organised and compliant with health standards
- Coordinate with front-of-house teams to enable efficient service
- Drive continuous improvement in kitchen efficiency and food quality
Requirements & Eligibility
- At least 2 years' experience in a Sous Chef, Senior Chef or equivalent position
- Demonstrated professional culinary experience that can be independently verified
- A relevant culinary qualification, an apprenticeship, or minimum Certificate III in Commercial Cookery or equivalent
- In-depth practical knowledge of commercial cooking techniques and food preparation
- Sound knowledge of food safety, hygiene and HACCP requirements
- A valid NSW Food Safety Certificate together with current food handling certification
- Proven experience in leading or supervising kitchen teams
- Capacity to sustain consistent food quality in high-pressure environments
- Strong skills in planning, organisation and time management
- Experience managing stock control and food costs and reducing kitchen wastage
- Strong communication and teamwork capability
- A professional attitude and genuine commitment to culinary standards
- Ability to work full-time in New South Wales, with sponsorship available for the successful applicant
