Key Responsibilities
- Prepare fresh pasta, seafood and seasonal produce to a high quality
- Take full ownership of an allocated section during preparation and service
- Complete mise en place so the section is service-ready
- Maintain consistency in dish execution during high-volume service
- Hold excellent standards for taste, presentation and portion control
- Coordinate effectively with chefs and other members of the kitchen team
- Help keep kitchen operations smooth during busy services
- Provide support and guidance to less experienced kitchen staff
- Meet food safety, hygiene and cleanliness requirements
- Monitor preparation standards and keep food wastage to a minimum
- Adhere to established recipes, kitchen procedures and quality standards
- Work breakfast, lunch and dinner services as required, plus evenings, weekends and public holidays when rostered
Requirements & Eligibility
- Certificate III or IV in Commercial Cookery or equivalent trade experience, with the ability to provide evidence of relevant qualifications and professional experience
- Proven professional experience as a Chef de Partie or equivalent, backed by a strong background in high-volume commercial kitchen operations
- Demonstrated experience in Italian-inspired cuisine
- Practical fresh pasta and seafood preparation skills, along with experience using seasonal and fresh produce
- Capability to manage an individual kitchen section confidently
- Strong organisational, communication and teamwork skills
- Efficient and composed approach during busy service periods, with a professional focus on food quality, hygiene and workplace standards
- Availability to work nights and weekends
