The employer is looking for a capable, experienced cook with genuine commercial kitchen history, dependable habits and the technical skill to produce quality food every service. You will need to put proven skills to work, stay confident when the pressure rises and help maintain a professional service environment. The menu includes Japanese-inspired dishes, and there is room to suggest new dishes and menu changes, a useful way to keep developing as a chef.
Key Responsibilities
- Suggest new dishes, seasonal specials and updates to the menu
- Cook Japanese-inspired dishes so each plate meets the kitchen's quality benchmarks
- Get the day's ingredients prepped and ready ahead of service
- Check ingredients on arrival and during prep so they meet the required quality
- Choose the right cooking methods to produce dependable results
- Protect the flavour, quality, presentation and portion size of every dish
- Move between kitchen sections as needed and coordinate tasks so meals leave the pass on time
- Cook to the kitchen's recipes, portion controls and procedures
- Leave workstations tidy, organised and set for service
- Decide what to prep first when the kitchen is under heavy demand
- Keep track of how ingredients are used, flag stock needs and help order supplies
- Observe food safety, hygiene and workplace safety rules
- Keep communication open with other chefs and front-of-house staff
- Help sustain a kitchen culture that is upbeat, disciplined and professional
Requirements & Eligibility
- At least 3 years in professional kitchens, backed by a culinary, commercial cookery or equivalent qualification
- A demonstrated record in commercial restaurant settings
- Japanese cuisine experience will be viewed favourably
- Sound hands-on cooking and prep knowledge, together with an understanding of professional hygiene and food safety practice
- Consistency and a detail-focused approach when service is busy
- Well-developed planning, organisation and time-management skills
- Capable of working without constant supervision while cooperating with the broader restaurant and kitchen team
- A professional outlook centred on reliability and quality
- Good communication at work
- Open to rotating shifts that include evenings, weekends and public holidays
- Verifiable evidence of relevant qualifications and experience can be supplied
- Must satisfy Australian employment and visa eligibility requirements; appropriately qualified, eligible candidates can be offered visa sponsorship
