Experienced butchers looking to advance their trade career can step into a Full-Time Butcher role with an established meat and poultry operation in Ascot Vale, Melbourne. The position spans commercial meat preparation and retail production, so you will use the full breadth of your skills.

Day-to-day work covers everything from carcass breakdown and precision cutting to value-added products, quality control and customer orders. Alongside this, you will maintain consistent product quality, operate processing equipment safely and support an efficient, hygienic workplace.

Key Responsibilities

  • Meet gourmet retail presentation standards in all meat preparation
  • Conduct carcass breakdown across a range of meat types
  • Execute precise cutting, trimming, grinding and portioning
  • Produce sausages and other processed meat lines
  • Season, smoke and marinate products as required
  • Operate slicers, grinders and associated meat-processing machinery
  • Weigh, package, price and label products with accuracy
  • Design and maintain appealing retail displays
  • Carry out quality and consistency checks on meat and finished products
  • Process customer orders with accuracy and efficiency
  • Oversee stock levels, contribute to inventory management and maintain production, stock and inventory records
  • Adhere to food safety, hygiene and workplace safety procedures
  • Keep knives, equipment and preparation areas clean, sustaining an organised and compliant workplace

Requirements & Eligibility

  • Certificate III in Meat Processing, or a qualification relevant to the trade
  • Minimum 3 years of professional experience relevant to the role
  • Demonstrated expertise in carcass breakdown
  • Well-developed commercial knife and meat-cutting skills
  • Experience in sausage and meat product production
  • Competence operating slicers and meat-processing equipment
  • Sound knowledge of food safety and hygiene alongside an understanding of workplace health and safety requirements
  • Experience in stock and inventory management
  • Ability to work to customer specifications and order requirements
  • High attention to quality, accuracy and presentation
  • Capacity to demonstrate genuine, relevant and verifiable industry experience
